Position Purpose:
The Development Scientist I – Ingredient Processing and Formulation within the MycoTechnology R&D team will be primarily responsible for downstream process development and characterization of novel ingredients, including proteins and small molecules, produced from precision or mycelial fermentation. The role may include development of formatting and delivery processes to improve ingredient performance, as well as execution of analytical tests to benchmark ingredient performance. This role may also provide technical support for external food processing workflows, support technology transfer and scale-up, and characterize novel ingredients.
The position will require cross-departmental collaboration with functions including Applications, Analytical Development, Innovation, Strain Engineering, Fermentation, Process Engineering, and Commercial teams.

The expected Salary Range for this position is: $70,000 - $80,000/year
This role may be eligible for additional compensation, which can include bonuses or other incentive programs, depending on role eligibility.

This role may also provide technical support for external food processing workflows, support technology transfer and scale-up, and characterize novel ingredients.

Essential Duties:
- Execute hands-on post-fermentation process development activities in a laboratory setting
- Process development scope may include but is not limited to downstream processing, ingredient formatting, and
- external food processing technical support
- Unit operations of interest may include, but are not limited to, spray drying, microencapsulation, pasteurization, reaction engineering, phase separations, TFF, FPLC, centrifugation, and others.
- Perform independent research to build in-house capabilities and guide development decision-making
- Collaborate with other departments as a technical SME in process development and material capabilities
- Generate, assess, and track inventory of R&D batches of material
- Support or manage external development and characterization activities
- Support isolation and characterization of new ingredients
- Demonstrate adaptability and creativity in problem-solving, with a generalist mindset.
- Generate and characterize new ingredient formats using biomolecular processing techniques such as filtration,
- FPLC, phase separation, encapsulation, spray drying or others.
- Execute analytical techniques to benchmark ingredient performance and support ingredient development.
- Isolate and support characterization of active ingredients of various molecular identities, including active proteins
- and small molecules, in a bench-scale laboratory environment
- Manage logistical details of R&D lot production, formulation and stability studies, and process models.
- Track and record data using a lab notebook / ELN and LIMS system.
Knowledge, Skills and Experience Required:
- Bachelor’s degree, Master’s degree, or PhD in chemical engineering, food engineering, food science, or related field.
- At least 2 years of experience in ingredient formulation and processing in the food industry
- Experience with food or pharmaceutical process development
- Experience with some food processing and/or biomolecule manufacturing unit operations including, but not limited to, spray drying, pasteurization, reaction engineering, encapsulation, phase separations, TFF, FPLC, sterile filtration, centrifugation, freeze-drying or others.
- Experience in biomolecular laboratory techniques and chemistry wet-lab techniques
- Experience in isolation or purification of macromolecular or small molecule species
- Exposure to regulated manufacturing facilities and GMP, GLP, GDP
- Proficient in Microsoft Excel, Word, Outlook, Office, PowerPoint.
- Proficient in one or more laboratory software including ELN, LIMS, Unicorn, or others.
- The ability to travel approximately 15% of the time.
